Branden Robinson posted a handy tip that uses wait shell builtin to add sound / speech notifications to long running tasks after you've kicked off the task.
On a related note, KDE's konsole has "Monitor for Silence" and "Monitor for Activity" options, which notify you when a command stops generating output, or starts printing on screen. And some of the notification options are custom sounds, flashing the taskbar or running any command of your choice.
gnome-terminal can be made to exit or restart the command on its completion.
